Seitan’s Quarters evolved from an experimental approach to vegetarian cooking, branching out from regular staples that fit into the traditional concept of a Sunday roast without being meat. Seitan is at the heart of our offer, underpinning the tearable texture of our sausages and burgers, giving the food its firmness and shape. But we’re not making a pure seitan, but instead packing umami flavours and healthy pulses in to make something that can sit alongside your chips or in a bun. Or wherever!
What is special about Seitan? And what is it anyway!? Seitan is food made from vital wheat gluten, something the Chinese have been using for well over a millennium. It’s the wheat gluten obtained by mixing wheat flour with water, then rinsing it to remove the starch. This vital wheat gluten is then mixed with broth and some other ingredients to make seitan. Seitan’s firm, chewy texture and savoury taste are integral to our approach. In one of the recipes we trialled vital wheat gluten accounted for about a quarter of the ingredients by weight.
